Reblogged from The Nutrition Doctor is In the Kitchen:
Salad: It's Not Just a Side
Why is your salad always a secondary role? Or, worse yet, never even cast in your dinner repertoire? (Sigh. More theater references. Sorry, occupational hazard.)
To me, salad often IS dinner, and a delightful one at that. I really do love to cook - and eat! - elaborate meals, and I write many a blog entry about such dishes.
It's time to reblog a post featuring one of my favorite summer suppers, which I just ate (again) last night: a big salad (fixins' up to you) + corn-on-the-cob. I updated the piece with fabulous photos of summer corn and last night's unbelievable salad. Isn't it time you gave this concept a try? If you're still not convinced, I encourage you to read the post for the why. I promise you'll be amused. Good food porn, too.
