Here’s a short post for an easy recipe for lunch or perhaps to accompany a big salad for supper. After gawking at the unbelievably gorgeous heart-of-the-summer tomatoes at the market today, I threw this sandwich together immediately upon returning home in my dire need to eat one as soon as possible. I must say that I was pretty impressed with how wonderfully it all came together.

Okay, yes, another reblog. I didn't intend to do two in a row, really I didn't, but it's the crazy last week of my intensive summer class and I'll bet you haven't seen it yet. It's also quite appropriate as my summer tomato love affair is just getting started and this sandwich is amazing - and a cinch to prepare. I took care to add more photos and even did a touch of editing to enhance your reading pleasure. And it really is one of my favorite summer sandwiches so I wanted to share the love.
